PRODUCTION AREA

The processing and packaging area of the sobaos covered by the Protected Geographical Indication “Sobao Pasiego” is focused on the so-called region of ‘Pas’, covering the geographical area bounded by the rivers Pas and Pisueña and the area of influence of these rivers. It is, therefore, located in the downtown area of Cantabria.

“Sobao Pasiego” FEATURES

Made from a dough of wheat flour, butter, sugar and eggs, with butter fat the only supported in its preparation.

  • External appearance: rectangular batter whose crumb is bright yellow and has a characteristic surface tan.
  • Texture: dense, spongy and juicy.
  • Taste: Sweet, especially highlighting the buttery aroma.

COMPOSITION

  • Humidity: minimum 15% and maximum 20%
  • Protein: minimum 4%
  • Fat: minimum 24% and maximum 32%
  • Carbohydrate (glucose): minimum 45%
  • Ashes: max 1.70%
  • Water activity: minimum 0.7% and maximum 0.9%

PRESENTATION

In a housing quadrangular base paper (traditionally called cap) in which the folds are wings characteristics.

TYPES

Considering the weight of the product are three types:

  • Big “Sobao Pasiego” : 130 – 180 grams.
  • Medium “Sobao Pasiego”: 40 – 80 grams.
  • Small “Sobao Pasiego”: 20 – 40 grams.

REGULATIONS OF THE TRADEMARK

  • Order GAN / 47/2005, of October 5, for which the rules of the Protected Geographical Indication “Sobao pasiego” is approved.
